Leftover mashed potatoes? Don’t know what to do with them? I’ve got you covered!
Grandma’s Potato Patties
(makes 4-5 patties)
1/2 tbsp butter
1 cup leftover mashed potatoes
salt and pepper to taste
1 egg
3-4 heaping tablespoons flour
- Mix together mashed potatoes, salt and pepper, and egg. Stir in flour 1 tbsp at a time, until it reaches a thick consistency (somewhere between brownie batter and drop biscuits.
- In a pan, heat the butter to melt. Scoop in batter in rounds.
- Flip when browned, and let brown on the other side. I recommend you top it with the gravy down below!
Quick Onion Gravy
1/2 tbsp butter
1 tbsp diced white onion
2 tsp flour
3/4 cup vegetable broth
- In a pan, melt butter. Add onions and saute until brown on the edges.
- In a jar or tupperware, place broth and flour. Shake until well combined.
- Pour broth mixture into pan with onions. Stir until heated and well combined. Season with salt and pepper and enjoy!
