Grandma’s Potato Patties and Gravy

Leftover mashed potatoes? Don’t know what to do with them? I’ve got you covered!

Grandma’s Potato Patties
(makes 4-5 patties)

1/2 tbsp butter
1 cup leftover mashed potatoes
salt and pepper to taste
1 egg
3-4 heaping tablespoons flour

  1. Mix together mashed potatoes, salt and pepper, and egg. Stir in flour 1 tbsp at a time, until it reaches a thick consistency (somewhere between brownie batter and drop biscuits.
  2. In a pan, heat the butter to melt. Scoop in batter in rounds.
  3. Flip when browned, and let brown on the other side. I recommend you top it with the gravy down below!

Quick Onion Gravy

1/2 tbsp butter
1 tbsp diced white onion
2 tsp flour
3/4 cup vegetable broth

  1. In a pan, melt butter. Add onions and saute until brown on the edges.
  2. In a jar or tupperware, place broth and flour. Shake until well combined.
  3. Pour broth mixture into pan with onions. Stir until heated and well combined. Season with salt and pepper and enjoy!
