Roasted Zucchini and Tomatoes

This Delish recipe can easily be halved or doubled depending how many people will be eating!

Roasted Zucchini and Tomatoes

2 large zucchini
2 cups cherry tomatoes
2 cloves garlic, minced
2 tbsp basil, chopped
1/3 cup grated parmesan cheese
olive oil
salt and pepper

  1. Preheat oven to 350F.
  2. Chop zucchini into bite sized pieces. Slice tomatoes in half.
  3. In baking dish, combine zucchini, tomatoes, garlic, a drizzle of olive oil, and salt and pepper. Mix gently.
  4. Top with parmesan.
  5. Bake 35 minutes. Enjoy!
