This Delish recipe can easily be halved or doubled depending how many people will be eating!
Roasted Zucchini and Tomatoes
2 large zucchini
2 cups cherry tomatoes
2 cloves garlic, minced
2 tbsp basil, chopped
1/3 cup grated parmesan cheese
olive oil
salt and pepper
- Preheat oven to 350F.
- Chop zucchini into bite sized pieces. Slice tomatoes in half.
- In baking dish, combine zucchini, tomatoes, garlic, a drizzle of olive oil, and salt and pepper. Mix gently.
- Top with parmesan.
- Bake 35 minutes. Enjoy!
