Breakfast Casserole

Make this casserole the night before, then just pop it in the oven in the morning and you’ve got a lovely little breakfast or brunch! (Makes about 4 servings)

Breakfast Casserole

1 1/2 cups French bread, cut into cubes
5-6 beef Lit’l Smokies, cut into rounds
1/4 cup shredded Monterey Jack cheese
3 eggs, beaten
1/2 cup milk
1 tsp dried chives
1/2 tsp dried marjoram
1 dash ground mustard
1 dash salt
1 dash pepper

  1. Put half of the bread cubes into a small baking dish. Sprinkle on sausage rounds and cheese. Top with the rest of the bread cubes.
  2. In a bowl, combine eggs, milk, and spices. Pour over the bread cubes evenly. Cover and refrigerate overnight.
  3. In the morning, bake at 325F for 45 min or until the eggs have set. Enjoy!
