Make this casserole the night before, then just pop it in the oven in the morning and you’ve got a lovely little breakfast or brunch! (Makes about 4 servings)
Breakfast Casserole
1 1/2 cups French bread, cut into cubes
5-6 beef Lit’l Smokies, cut into rounds
1/4 cup shredded Monterey Jack cheese
3 eggs, beaten
1/2 cup milk
1 tsp dried chives
1/2 tsp dried marjoram
1 dash ground mustard
1 dash salt
1 dash pepper
- Put half of the bread cubes into a small baking dish. Sprinkle on sausage rounds and cheese. Top with the rest of the bread cubes.
- In a bowl, combine eggs, milk, and spices. Pour over the bread cubes evenly. Cover and refrigerate overnight.
- In the morning, bake at 325F for 45 min or until the eggs have set. Enjoy!
