Chicken and Roasted Pepper Pizza

This is my adaptation of a recipe from Closet Cooking’s blog, and it was really great. I added balsamic reduction and crushed red pepper flakes to mine. The chicken requires prep the night before, but it is so worth it; it would be delicious with pasta or even by itself!

Chicken and Roasted Pepper Pizza

For the chicken:
1 small chicken breast
1/2 lemon, juice and zest
1 tbsp olive oil
1/2 tsp oregano
Put this all in a bag to marinate 24 hours in the fridge.
Salt and pepper to taste while cooking.

For the pizza:
1 pizza dough of your choice
1 tbsp olive oil
2 cloves garlic, smashed/diced
1 1/4 cup mozzarella cheese shreds
1 roasted red pepper (or about 15 strips from a jar)
1/2 tomato, sliced

  1. Preheat oven to 500F, and put your pizza dough on a greased baking sheet.
  2. Sear the chicken in a pan about 5 minutes on each side, until fully cooked.
  3. Coat pizza dough lightly with olive oil, and sprinkle on crushed garlic. Cover with cheese.
  4. Slice chicken, and add chicken, tomatoes, and peppers to the pizza.
  5. Bake 13-16 minutes, until crust and cheese are lightly browned.

Other additions:
Top with balsamic reduction, basil, crushed red pepper flakes, or spinach before serving.
