So many spinach artichoke recipes make like a casserole sized thing of dip, so I’ve adapted recipes into a smaller portion!
Mini Spinach Artichoke Dip
1 tsp oil
2 handfuls baby spinach, chopped
1 clove garlic, minced
1/3 cup chopped artichoke hearts
1/4 cup cream cheese
1 tbsp miracle whip
2 tbsp shredded parmesan
2 tbsp shredded mozzarella
- Preheat oven to 375F.
- In an oven safe pan, heat the oil. Add in garlic and spinach. Cook, stirring occasionally, until the spinach is fully cooked.
- Remove from heat. Stir in artichokes. Gently stir in cheese, cream cheese, and miracle whip.
- Top with more cheese if desired. Bake for 9-12 minutes!
