This little pasta is totally delicious and very filling!
Bacon Butternut Squash Pasta
1 serving linguine
3 slices bacon, diced
1/4 small butternut squash, grated
1/2 clove garlic
1/4 tsp crushed red pepper flakes
1 tsp onion, minced
2 tsp shredded mozzarella cheese
1/3 cup half and half
1 egg yolk
pinch of salt
dash of pepper
- In a pot, heat water to boiling and add pasta.
- While pasta cooks, in a pan over medium heat cook chopped bacon. Remove bacon from pan and set aside. remove most of the bacon grease also.
- To the pan, add onion, garlic, crushed pepper, and squash. Brown.
- Pour in half and half, cheese, and egg yolk, stirring quickly so you don’t wind up with scrambled eggs. Stir in salt and pepper. Add pasta and a dash of pasta water. Stir in bacon and enjoy!
