Bacon Butternut Squash Pasta

This little pasta is totally delicious and very filling!

Bacon Butternut Squash Pasta

1 serving linguine
3 slices bacon, diced
1/4 small butternut squash, grated
1/2 clove garlic
1/4 tsp crushed red pepper flakes
1 tsp onion, minced
2 tsp shredded mozzarella cheese
1/3 cup half and half
1 egg yolk
pinch of salt
dash of pepper

  1. In a pot, heat water to boiling and add pasta.
  2. While pasta cooks, in a pan over medium heat cook chopped bacon. Remove bacon from pan and set aside. remove most of the bacon grease also.
  3. To the pan, add onion, garlic, crushed pepper, and squash. Brown.
  4. Pour in half and half, cheese, and egg yolk, stirring quickly so you don’t wind up with scrambled eggs. Stir in salt and pepper. Add pasta and a dash of pasta water. Stir in bacon and enjoy!
