I had half a box of lasagna noodles left from when I made Lasagna Soup, and this was a yummy way to use them up!
Lasagna Roll-Ups
1/2 box lasagna noodles (8 or 9 noodles)
24 oz container small curd cottage cheese
10 oz package frozen chopped spinach
2 eggs
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
1/2 cup shredded mozzarella cheese
1-1 1/2 cups pasta sauce
- Preheat oven to 400F and bring a pot of water to boil over high heat. Thaw the spinach in the microwave and squeeze out the excess moisture with paper towels.
- Season the water with salt and a dash of oil. Cook lasagna noodles according to time on the package.
- Meanwhile, in a bowl mix the cottage cheese, eggs, spinach, seasoning, salt, pepper, and 1/4 cup shredded mozzarella.
- Spray a square (8×8 or 9×9) baking dish with nonstick cooking spray. Coat the bottom of the baking pan with a layer of pasta sauce.
- Once the noodles are done, remove them from the heat but leave them in the water so they don’t dry out.
- One by one, spoon 2-3 tablespoons of filling onto each noodle. Spread it out so flat part of the noodle is covered. Roll tightly and place in the baking dish.
- Top the roll-ups with any remaining filling, another layer of pasta sauce, and a layer of mozzarella (1/4-1/2 cup).
- Cover with aluminum foil and bake for 30 minutes. Enjoy!
