Mexican Rice and Quesadillas

Let’s be real, quesadillas are a go to. They’re quick, yummy, and so easy to make! And what’s better with a quesadilla than Mexican rice?

Mexican Rice

2 cups water
1/2 cup tomato sauce
1/2 tsp onion powder
1 dash salt
1/4 tsp ground cumin
1 cup long grain rice
1 tablespoon butter

I didn’t have tomato sauce, so I blended half a tomato and about 1/4 of a very small onion to use in the place of tomato sauce.

  1. Bring water, tomato sauce, and spices to boil over medium heat. Add rice and butter and stir. Reduce heat to low; cover and simmer 20 minutes.
  2. Remove from heat. Let stand 5 minutes. Fluff with fork before serving.

Quesadilla

2 tortillas
shredded Mexican cheese
Meat and veggies
Salsa or hot sauce, for dipping

  1. Begin heating a pan. Put a tortilla into the pan and sprinkle with cheese.
  2. Add your fillings, another layer of cheese, and top with another tortilla.
  3. Cook both sides until tortilla is slightly browned, and the cheese is melted.
