Croquettes
1/2-3/4 cup leftover mashed potatoes
1/2 clove garlic, minced
1 tbsp finely chopped onion
1 tbsp shredded cheese (I used monterey jack)
1/3 cup flour
1/4 cup milk
1/2 cup bread crumbs
oil for frying
dipping sauce of choice
- Heat up leftover potatoes in the microwave. Stir in garlic, onion, and cheese. Shape into rounds and place in the freezer for 30 minutes.
- Dip each croquette into the flour, then the milk, then the bread crumbs. Heat oil about 1/2 inch deep in a pan.
- Test the oil with a pinch of flour. If it sizzles, place in croquettes and cook until brown, flipping to brown the other side.
- Place on a paper towel to remove excess oil. Serve with dipping sauce of choice and enjoy!
Ideas for sauce: Sriracha mayo, tomato sauce, chipotle ranch, whatever you prefer.
