This recipe, adapted from BakeAtMidnite, is enough to feed a family and is SO good.
Pineapple Jalapeño Glazed Wings
3-4 lbs chicken wings, cut into wings and drummies
1 tsp garlic powder
1 tsp salt
1/2 tsp pepper
1 1/2 cups pineapple juice
1 cup light brown sugar
2 tbsp soy sauce
2 tbsp rice vinegar
2-3 tsp chopped jalapeño
1/4 tsp ground ginger
1 clove garlic, minced
2 tbsp water
1 tbsp cornstarch
- Preheat oven to 375F. Line baking sheet with parchment paper and spray paper with nonstick spray.
- Mix garlic powder, salt, and pepper. Pat chicken wings dry with paper towel. Season with mix and place on baking sheet. Bake for 45 mins.
- After about 20 mins, start on the sauce: In a saucepan on the stove, combine pineapple juice, brown sugar, soy sauce, vinegar, jalapeño, ginger, and garlic. Heat until bubbling and simmer 15 minutes, uncovered, so it reduces.
- Mix cornstarch and water in a small bowl. Pour slowly into the sauce, stirring constantly. Warm until sauce thickens to desired thickness.
- Remove wings from oven and place in a large bowl. Pour in sauce, and stir to coat. Enjoy!
I baked these wings, but you could totally fry them, slow cook them, grill them, etc and then coat with sauce.
