Pumpkin Biscuits (Pumpkin Season 2.1)

This season I don’t think I’ll be cooking a whole pumpkin, but I can still cook with canned pumpkin!!

Pumpkin Biscuits

2 1/4 cups flour
4 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup cold butter
2/3 cup pumpkin (not pumpkin pie filling)
3/4 cup milk (I used soymilk)

  1. Heat oven to 450F.
  2. In a large bowl, mix flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. Cut the butter into small cubes, then use your hands to work it into the flour mix until you can’t see chunks of butter anymore.
  4. Mix together pumpkin and milk, then add to flour mix. Stir until combined, but don’t overmix!
  5. On a floured countertop, turn out the dough and flatten to about 3/4 in thick. Cut out circles and re-flatten.
  6. Bake on a parchment lined sheet for 12 minutes. Enjoy!
