Shakshouka
2 tsp oil
1 yellow bell pepper, diced
1/2 white onion, diced
2 cloves garlic, minced
1/2 tsp coriander
1/2 tsp paprika
1/4 tsp cumin
3 tomatoes, diced
1 can tomato sauce
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
dash red pepper flakes (optional)
4 eggs
- In a pan, heat oil. Add pepper, onion, garlic, coriander, paprika, and cumin. Cook until soft (10 mins).
- Add tomatoes, tomato sauce, sugar, salt, and pepper (add pepper flakes if desired). Cook until reduced and thickened (another 10 minutes).
- Using a spoon, make 4 indentations in the mixture, and crack an egg into each one. Cover, and let poach until the whites are soft.
- Serve with rice, flatbread, or crusty Italian bread and enjoy!
