Shakshouka

Serve this tasty meal with rice, naan, or crusty bread, and you won’t be disappointed!

Shakshouka

2 tsp oil
1 yellow bell pepper, diced
1/2 white onion, diced
2 cloves garlic, minced
1/2 tsp coriander
1/2 tsp paprika
1/4 tsp cumin
3 tomatoes, diced
1 can tomato sauce
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
dash red pepper flakes (optional)
4 eggs

  1. In a pan, heat oil. Add pepper, onion, garlic, coriander, paprika, and cumin. Cook until soft (10 mins).
  2. Add tomatoes, tomato sauce, sugar, salt, and pepper (add pepper flakes if desired). Cook until reduced and thickened (another 10 minutes).
  3. Using a spoon, make 4 indentations in the mixture, and crack an egg into each one. Cover, and let poach until the whites are soft.
  4. Serve with rice, flatbread, or crusty Italian bread and enjoy!
