Cozy Corn Chowder

This soup is warm and delicious but won’t leave you feeling heavy because of all the yummy veggies! (Makes about two servings)

Cozy Corn Chowder

1 1/2 tbsp butter
1/4 of a bell pepper, diced
3-4 slices of pickled jalapeño, diced
1 clove garlic, minced
1 tbsp diced onion
2 tbsp flour
1 cup stock (veggie or chicken)
1/2 cup milk of choice
Kernels from 1 ear of corn
1/4 of a potato, finely diced
1/2 tsp salt
1/4 tsp paprika
1/8 tsp pepper
1 dash cayenne
2 tbsp diced cherry tomatoes

1. In a pan, melt the butter. Then, sauté the peppers, onions, and garlic for 2 minutes. Add the flour and stir until a paste forms. Add in the stock in small increments, stirring constantly so your soup doesn’t get lumpy.
2. Stir in the milk and add the corn, potato, and all of the spices. Cover and simmer for about 12-15 minutes, stirring occasionally.
3. Add the tomatoes, stir, and simmer another minute. Enjoy!!
