Single Serve Scones

Wow this recipe is blowing my mind. It makes two scones in 15 minutes and you can customize them with literally whatever flavors you want. Sweet, savory, plain, you can do it all!

Single Serve Scones

1/3 cup flour
1/2 tsp baking powder
dash of salt
1 tbsp sugar (or brown sugar)
1 tbsp applesauce (or mashed banana, or oil, or butter)
2-3 tbsp milk (I used soymilk)
any add-ins

  1. Preheat oven to 450F. In a bowl or coffee mug, combine flour, baking powder, salt, sugar, applesauce, and 2 tbsp milk.
  2. Stir in your add ins. If too thick, add up to 1 tbsp more of milk. You want your batter to be thin enough that its like a cookie dough, not like bread dough, but not so thin that it spreads out on the pan. 
  3. Scoop into two rounds, about 3/4 inch tall on a greased baking sheet, and bake 9-10 minutes.

Add in ideas:
Just remember, if you are adding in a liquid, only use 2 tbsp of milk!

  • 2 tbsp chocolate chips and 1 tbsp chocolate hazelnut spread
  • 1 apple, diced and sauteed with cinnamon and brown sugar until soft
  • 2 tbsp lemon juice and 1 tsp poppyseeds
  • 1 tbsp orange juice and 1 tbsp dried cranberries
  • 1 tbsp strong coffee and 1 tbsp brown sugar
  • 2 tbsp dried fruit
  • 1 tbsp green onions and 1 tbsp chopped bacon
  • Literally anything you want.
